Francis Miot, the passion for sugar and good things

Francis Miot has always been passionate about sugar, fruit and good things. It was in 1985 that he opened a small shop in Pau , where he made delicious blueberry pies in the back kitchen. The success is there and the store expands accordingly, as well as the range of ready- made products . Francis Miot develops a talent and a very sharp know-how in the preparation of jams . He excels in the art of choosing good , tasty and fragrant fruits and uses the least amount of ingredients and cooking time possible, to preserve all the flavors. Rewarded many times for his art, he was triple World Champion and Best Jam maker in France. Having left in 2015, he left behind a know-how that is perpetuated with respect and conviction, at the Maison Francis Miot in Pau and Uzos.

For more than 30 years, at Maison Francis Miot, jams have given pride of place ... to fruit ! You know it if you have already prepared jams, it takes a lot of sugar for conservation . Francis Miot has worked for years and selected , combined varieties of fruit to use as little sugar as possible . Why ? In order not to distort the aromas of fruit, but also allow you to eat without guilt complex and jams every day!

Everything is cooked in a copper cauldron and if we talk about jams, in fact we should rather mention " simmered fruits ", because the sugar level is as low as possible (65 to 75% depending on the fruit). A special range exists and offers 100% fruit , that is, there are no added sugars! The consequence ? The jam keeps less time, but after all, who will manage to keep it more than 3 days without eating it? Francis Miot's naughty confectionery

Naughty by their name, (you had to dare!), But this is only a prelude to their delicious and addictive flavors . Francis Miot invented the Coucougnettes to take up a challenge at the start of the new millennium. The Municipality of Pau proposed to local artisans to develop a candy recipe , which is representative of the city of Pau . Francis Miot's boutique being located right next to the Château de Pau , home of the family of Henri IV , it was only natural that he was inspired by the legendary intimate escapades of the King, for his daring sweets. The " Coucougne " is here to be understood in the sense of " hug ", " pampering ", but that's what you understood, right? In 2000, the Coucougnette de Pau was recognized as the Best Bonbon in France . It consists of a toasted almond, dipped in dark chocolate, then coated with an almond paste with aromas of raspberry, ginger and Armagnac. It is a real delight that no one, not even the children, can resist. Its pretty pink color , its shiny appearance, its voluptuous form, gave Francis Miot the idea of applying this concept to other sweets.

Thus were born the " Nipples of Queen Margot ", " Les Plums de Monsieur ", " Les Gateriz ", " Les Bijoux de la Reine " ... All as delicious as each other.

At the back of the shop, a tea room offers simple , but quality catering with fresh, local products . Come and try the gourmet plates , the sandwiches with fresh bread, simple and good things, all prepared daily and on site.

For dessert , you can dip in the shop or treat yourself to a box of delicious chocolates , or taste one of the artisanal pastries offered (which are all homemade). For drinks, the mineral waters are local and a fine selection of Jurançons wines will appeal to those who wish to accompany their meal with a small glass.
