    • L’Ossau, a magnificent Bourgeois House with preserved traditions in Pau

French gastronomy is in the spotlight at L'Ossau, a restaurant where the art of the table is valued. Open for lunch and dinner from Monday to Friday, the establishment designated as Maison Bourgeoise offers you a moment out of time in a privileged setting. Book your table now at 32 rue Tran in the heart of Pau.

L'Ossau, a restaurant with bourgeois and refined cuisine in Pau

L'Ossau is reminiscent of these beautiful 19th century houses with careful service where great classics of French cuisine delight the palate, served on elegant tableware. Promoting fresh, local and above all seasonal products, Benjamin and Étienne have developed a short menu made up of famous, revisited and personalized recipes. Chicken from Maison Biraben, Duroc pork from the Lasset farm, organic bread from Gaston's bakery or cheeses from the Gazibos dairy, each ingredient is carefully selected to delight you with traditional and creative cuisine. The menu is adjusted every month according to the seasons, as is the lunch menu called semainier with gourmet proposals that change every 3 weeks. Some recipes served in the evening offer a nice show in the dining room, especially with the Mademoiselle flambée crepe, a delicious treat to taste. Made by pastry chef Jonathan Vallenari, the desserts are real delights to savor before coffee.

L'Ossau, a Bourgeois House renowned for its gastronomy in the city center of Pau

When two friends passionate about gastronomy meet, the recipe is successful! After a joint stint at Thierry Marx's Mandarin Oriental, Benjamin Grandclément and Étienne Guinel found themselves in common values and decided to create a place in their image: L'Ossau in a Bourgeois House. The former works behind the stove while the latter evolves in the dining room, a close-knit duo that advocates French savoir-vivre. Settle into an elegant and refined room with warm woody notes, and let yourself be carried away by the serenity of the place. In the summer, a pretty shaded terrace allows you to enjoy sunny days.

The little extra? Homemade sauces between the juices, stocks and broths, the opportunity to mop up your plate without feeling guilty.

Three of us had the good fortune to dine at L’Ossau following a recommendation from a friend in the USA. Each of us had different dishes. All were superb. The wine recommendation by Etienne was spot on. A most enjoyable evening from starters to dessert!

A charming restaurant of modest size, so reservations were a good idea. We enjoyed dinner so much, we returned for lunch a few days later. Our dinner visit was very busy with a large apparently corporate group, but the two servers seemed to move efficiently without apparent stress. I truly enjoyed trying poule au pot for the first time. My companion was very pleased with the porc Wellington. Our server, who turned out to be one of the owners, helpfully spoke English as much of the menu required some explication. Despite the needs of the large party, he also prepared pre-meal cocktails that were perfect. Lunch was less crowded and the service remained pleasant. A terrific onion soup was the highlight for me, but I suffered entre envy over my companions choice of the mackerel filets. We enjoyed the charming but unpretentious setting and service, and to us the unique menu. We highly recommend L’Ossau.
