Our farm is located at the entrance to Laruns next to Intermarché. We raise a flock of 350 sheep with which we produce sheep cheese.
Our animals are of Basco-Bearnaise breed, a rustic breed perfectly adapted to our region. In winter they go out every day to graze unless the weather permits it, and in the evening she returns to the sheepfold where they are given good fodder to harvest on our farm.
In summer, we migrate to the Pombie estive located at the foot of the Pic du Midi d'Ossau, this is where we produce the famous summer pasture cheese with incomparable flavors thanks to an exclusivity of 'herbs rich in flowers (licorice, thyme…).
Our cheeses are matured in our maturing cellar, where we take care of them every day by rubbing them and turning them over for several months so that they gradually develop all their aromas.
We also make greuil, an excellent product which is very successful, very rich in protein and low in fat!!! What could be better! You can taste it according to your tastes! Sweety salty! To complement with lots of recipes!
